Ham and Swiss Cheese Potatoes (Crock Pot) image

I found this in a book that I must return to the library so am posting for future reference. This comes from The $7 a Meal Slow Cooker Cookbook. "Kids especially will love this recipe. It's hot, creamy and comforting, made easy by starting with frozen potatoes."

I've made this recipe with different types of potatoes, and I've found that Yukon Gold potatoes work the best. They're nice and fluffy when they're cooked.

This recipe is a great way to use up leftover ham. I also like to add some chopped broccoli or cauliflower to the potatoes for a healthier meal.

The potatoes were a little dry for my taste, but the flavor was still good. I think I'll add a little more butter or milk next time.
