Ham It Up Spread image

I know what I don't like about most ham salad spreads. So I set out to correct it. I am most happy with the results. Take a look and see if you might like it too. If you like this recipe see others at my website: http://mybestcookbook.wordpress.com

Time 15m

Number Of Ingredients 7

3 c cubed ham
4 scallions, white part and a bit of the green, chopped
2 sweet gerkins
1 Tbsp heaping, of pickled jalapenos slices
1 Tbsp dijon mustard
1/3 c mayonnaise
1/2- 2/3 tsp pepper

Steps:

  • 1. Place everything in a food processor with not quite all the mayo and pulse until it is pebbly size and encorporated. Add more mayo just to bind. Taste and adjust as you wish.
  • 2. The point is to get away from the salty, heavy mayo and cloying sweetness. If you like more of this, then obviously add more sweet pickles and mayo. I stayed away from the dill pickles because of the salt.

This recipe didn't turn out well for me. The spread was too runny and didn't hold its shape.

I found this spread to be a bit bland. I would add some chopped onion or celery for more flavor.

This recipe is a bit too rich for my taste. I would cut back on the cream cheese next time.

I'm not a big fan of ham, but I really enjoyed this spread. It's creamy and flavorful, and the ham is not overpowering.

This ham spread is so versatile. I've used it as a dip for vegetables, a spread for sandwiches, and even as a filling for deviled eggs.
