Hamburger & Barley Soup image

a very hearty soup.

Number Of Ingredients 15

1 lb lean ground beef
1 c celery, diced
1 c carrots, diced
1 c cabbage, sliced
1 small onion, diced
4 c beef broth
1.5 c canned plum tomatoes, undrained
1/3 c barley, uncooked
1 tsp dried thyme
1/2 tsp basil
1 tsp chopped garlic
1.5 tsp brown sugar
1.5 tsp balsamic vinegar
1 tsp worcestershire sauce
salt and pepper to taste

Steps:

  • 1. Brown beef in a large saucepan.
  • 2. Drain off any fat then add celery, carrots, cabbage, onion, beef broth, tomatoes and juice, barley, thyme, basil and garlic.
  • 3. Cover, bring to a boil then reduce heat and simmer 45 minutes to an hour or until vegetables and barley are just tender.
  • 4. Remove from heat, stir in brown sugar, vinegar, worcestershire sauce, salt and pepper.
  • 5. Check seasoning and serve with plenty of crusty bread or rolls.

I'm not a huge fan of barley, but I thought this soup was pretty good. The hamburger and vegetables gave it a nice flavor, and the barley added a nice texture. I would definitely make it again.

This soup was a bit bland for my taste. I think it needed more seasoning. I also found the barley to be a bit too chewy.

I've made this soup several times now and it's always a crowd-pleaser. It's hearty, flavorful, and easy to make. I usually add a bit of extra garlic and onion, and sometimes I'll throw in some chopped carrots or celery. Always a hit!
