Hawaiian Chicken Breast image

I learned this recipe when I was in high school, from a mother whose children I babysat on a regular basis. It's so easy, and was one of the first meals I cooked for my future husband. I use boneless, skinless chicken breast now, but originally it was made with whole chicken breasts and thighs.

6-8 boneless chicken breast halves
(or 1 cut up chicken)
1 small can crushed pineapple, drained
1 small bottle regular thousand island dressing (8 oz)

Steps:

  • 1. Preheat oven to 350 degrees. Arrange chicken pieces in baking dish that just fits their size, without too much space in between.
  • 2. Stir together pineapple and Thousand Island Dressing. Pour over chicken breasts.
  • 3. Bake, covered with foil, for 30 minutes. Remove foil and continue baking 20 - 30 more minutes, depending on thickness of chicken pieces, until chicken is well done and coating glistens.
  • 4. Serve with rice and stir-fried vegetables.
