Hawaiian Fruitcake image

I'm on a mission to declare fruitcake a fruit... That way I won't feel as guilty when I eat this every day of the week! Sweet and satisfying, this is one of the most perfectly moist cakes I've ever made.

Number Of Ingredients 13

2 c flour
2 c sugar
2 eggs
2 tsp baking soda
1 tsp vanilla extract
1/4 tsp salt
1- 20 oz can(s) pineapple, crushed with juice
1 c chopped walnuts
FROSTING
8 oz cream cheese
1 1/3 c confectioners' sugar
1/2 c butter, softened
1 tsp vanilla extract

Steps:

  • 1. Combine all ingredients in a large bowl. Mix by hand. pour into a greased 9x13 pan. Bake at 325 for 40-50 minutes. Frost when cooled.
