This is my own version of a local favorite, papaya salad. It is wonderful to take to potluck or other gatherings, because it gets better with a few hours of resting time. 'Tis very nice with fresh ahi sashimi, brown rice, and a glass of icy Gewurztraminer. The sweetness of the wine softens the heat of the salad. Serve garnished with edible flowers or roasted sesame seeds.

Steps:
- Place bell peppers, tomato, and cucumber in a ceramic or glass bowl. Add vinegar, oil, soy sauce, and 1 tablespoon salt. Let marinate while you prepare the papayas.
- Chop papayas using a food processor.
- Pour papayas into a large bowl and sprinkle with more salt; let sit for 5 minutes.
- Transfer marinated vegetable mixture and extra marinade to papayas and mix well. Taste and adjust oil, vinegar, or soy sauce as needed. Refrigerate for 30 minutes for flavors to blend.
