Yield 4

Number Of Ingredients 10

1 pound penne
1/4 cup olive oil
3 large garlic cloves, crushed
1 1/2 pounds broccoli rabe, florets and tender stems only
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
1 cup pasta water
1/2 pound cooked sweet Italian sausage, crumbled or chopped
2 teaspoons unsalted butter
1/2 cup freshly grated Grana Padano, or Parmigiano Reggiano

Steps:

  • Cook the penne in a large pot of boiling salted water until al dente. Drain well. Meanwhile, in a large deep skillet, heat the oil. Add the garlic and sausage removed from casings and cook over moderately high heat until garlic golden and sausage no longer pink. Add the broccoli rabe, crushed red pepper and salt; cover and steam for 5 minutes, stirring occasionally. Stir in the pasta water, sausage and butter and cook over high heat until the sauce reduces slightly, about 3 minutes. Add the penne to the skillet and toss gently. Sprinkle half of the cheese on top and toss again. Serve immediately, sprinkled with the remaining cheese.

I'm not a big fan of pasta, but I thought I'd give this recipe a try. I was pleasantly surprised! The penne was cooked perfectly and the sauce was flavorful and creamy.

I followed the recipe exactly and the dish turned out bland. I think I might have used the wrong type of sausage.

This recipe was a bit too spicy for my taste, but I still enjoyed it. I would make it again, but I would use less red pepper flakes.

I made this dish for my family and they all loved it. The sausage was especially flavorful and the broccoli rabe added a nice touch of bitterness.
