Hawaiian Pineapple Pie image

This has been in my family for quite a while. It is really good!

Number Of Ingredients 16

CRUST
2 tsp melted margarine
2 Tbsp water
1 c graham cracker crumbs
FILLING
1 Tbsp gelatin, unflavored
2 Tbsp cool water
1/4 c boiling water
1/2 c cottage cheese, lowfat
1/4 c skim milk
1 tsp vanilla extract
1 tsp coconut extract
1 1/2 Tbsp sugar
2 c crushed pineapple, drained
GARNISH
ground cinnamon

Steps:

  • 1. Preheat oven to 250 degrees
  • 2. Combine ingredients for crust in ungreased 9-inch pie pan. Pat out evenly to form crust.
  • 3. Bake in preheated oven for 15 minutes. Cool.
  • 4. In small bowl, soften gelatin in cool water. Add boiling water and stir until gelatin is completely dissolved.
  • 5. Transfer gelatin mixture to blender. Add all other filling ingredients and process until smooth.
  • 6. Pour filling into crust. Sprinkle top with cinnamon. Refrigerate until firm, about 2 hours.
