Hearty Lentil Soup I image

This is a cold day, stick-to-the-ribs type of soup. Serve with French bread and a good salad and you'll feel good. If, while making this soup you find it to be too thick, just add heavy cream or water to dilute.

This soup was a bit too bland for my taste. I think I'll add some more spices next time.

This soup is a great way to use up leftover vegetables. I had some carrots, celery, and onions that were about to go bad, so I threw them in the pot with some lentils and vegetable broth. It turned out great!
