Heavenly Mixed Greens with Fruit image

This refreshing, colorful salad is a natural for holiday meals or brunches.

1/2 cup orange juice
1/2 cup honey
1 teaspoon ground cinnamon
1 medium jicama, cut into 1/4-inch slices
6 oranges, peeled and sliced
6 kiwifruit, peeled and sliced
8 cups bite-size pieces salad greens
1/2 cup dried cranberries

Steps:

  • To make dressing, in small bowl, mix orange juice, honey and cinnamon until well blended.
  • Cut jicama into star shapes using small star-shaped cookie cutter. In large serving bowl, place jicama stars, oranges and kiwifruit. Add salad greens and dressing; toss to mix. Sprinkle with cranberries.

Not bad, but not great. The dressing was a bit too tart for my taste, and the fruit overpowered the greens. I think I would have preferred a simpler dressing and fewer fruits.
