Heloise's Cake Mix Cookies image

Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

I made these cookies gluten-free by using a gluten-free cake mix. They turned out perfectly.

I didn't have any almond extract, so I used vanilla extract instead. The cookies still turned out great.

These cookies were a bit dry. I think I might have overbaked them. Next time, I'll bake them for a few minutes less.

I had a hard time getting the cookies to spread out in the oven. I think I might have needed to add a little more milk to the batter.

These cookies are a bit too sweet for my taste, but they're still good. I might try cutting back on the sugar next time.

I'm not a huge fan of cake mix cookies, but these are actually really good. They're moist and flavorful, and the almond extract gives them a nice touch.
