Hot Pineapple image

This recipe is a great one to serve at a brunch. The fruity, sweet taste goes well with the often served hashbrown casseroles or sausage casseroles. Of course, you can serve it anytime! I read about this recipe in one of the "Sweet Potato Queens" books, but haven't been able to find it again, so I made it up to match it as best as I could.

I've made this dish with different types of chili peppers, and I've found that the serrano peppers give it the best flavor. However, you can use any type of chili pepper that you like.

This dish is a great way to use up leftover pineapple. I usually have some leftover pineapple after I make a pineapple upside-down cake, and this is a great way to use it up.

I've made this dish with both fresh and canned pineapple, and it's always delicious. I prefer the fresh pineapple, but the canned pineapple is a great option when fresh pineapple is not available.

I've tried many hot pineapple recipes, but this one is by far the best. The combination of the sweet pineapple, the spicy chili peppers, and the tangy lime juice is simply irresistible. I'll definitely be making this again and again.
