4 tuna steaks (about 5 ounces each)
Salt and freshly cracked black pepper
1 cup diced pineapple
1 ripe papaya, peeled, seeded and diced
1/4 cup minced red onion
1 serrano chile pepper, seeded and minced
2 tablespoons fresh lime juice
2 tablespoons freshly chopped cilantro leaves
1 teaspoon hot chili oil
8 ounces somen noodles, cooked according to package directions

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of tuna with salt and cracked pepper. Place tuna on hot pan and cook 2 to 3 minutes per side for medium doneness.
  • Meanwhile, in a medium bowl, combine pineapple, papaya, onion, chile pepper, lime juice, cilantro, and chili oil. Mix well and season, to taste, with salt. Serve tuna over noodles and spoon salsa over top.

1 medium onion, finely chopped
3/4 cup packed light brown sugar
1/4 cup Dijon mustard
2-1/2 pounds thinly sliced deli ham
2 tablespoons cornstarch
2 tablespoons water
10 slices Swiss cheese or cheddar cheese, optional
10 kaiser rolls, split

Steps:

  • Mix first 4 ingredients. Place half the mixture in a 5-qt. slow cooker; top with half the ham. Repeat layers. Cook, covered, on low until heated through, 3-4 hours., Using tongs, remove ham from slow cooker, leaving pineapple mixture behind; keep warm. In a large saucepan, mix cornstarch and water until smooth. Stir in pineapple mixture; bring to a boil. Reduce heat; simmer, uncovered, until mixture is slightly thickened, stirring occasionally.   • Cut orange slices in half. Using a wooden toothpick, poke holes in the peel of each orange slice at 1/2-in. intervals. 1 tablespoon vegetable oil
2 garlic cloves, minced
1 onion, very thinly sliced
2 stalks lemongrass, the midsection only
3 slices galangal (2 slices if using dried)
1/4 lb mushroom, quartered (stems are usually omitted, but I use them)
1/2 cup bamboo shoot, sliced
1/2 cup pineapple chunk
6 cups chicken stock or 6 cups fish
1/3 tamarind juice
2 -3 tablespoons fish sauce, nuoc mam
1 1/2 tablespoons sugar
1 teaspoon salt (optional)
3/4-1 lb catfish, chunks
1 cup bean sprouts
1 green onion, sliced thin
1/4 cup mint
1/4 cup cilantro
1 -2 serrano chili, sliced

Steps:

  • Cut the midsection of the lemongrass into 1-2 inch pieces and smash them to release the aromatics.
  • Heat the oil in a large sauce pan over medium-high heat.
  • add the garlic, onion, lemongrass and galangal.
  • saute 2-3 minutes or until the onion is soft but not brown.
  • Add the pineapple, bamboo shoots, and mushrooms.
  • cook while stirring for about 1 minute.
  • Add the chicken (or fish) stock and turn the heat to high.
  • Once it's boiling, add the tamarind, fish sauce, sugar, and salt.
  • Stir well. Adjust seasonings to taste.
  • Add the catfish and boil gentle for about 5 minutes, until the fish is opaque.
  • Add the bean sprouts, mint, and green onion to the individual bowls.
  • Ladle soup on top.
  • Garnish with Cilantro and Serrano Chiles.

8 clove garlic (very finely minced)
1 small onion (very finely minced)
3 can(s) crushed pineapple (including juice)
2 1/2 c brown sugar
1 c apple cider vinegar
1 c lemon juice
6 large cans, tomato paste
5 can(s) water
1 1/2 Tbsp canning salt
1 1/4 tsp ground black pepper
1 tsp ground cloves
2 tsp garlic powder
1/2 c dark molasses
1/3 c corn syrup, light
1/3 c each: tabasco sauce and worchestershire sauce
1 large lemon (zest and juice)

Steps:

  • 1. Put all ingredients in a large stainless steel kettle. Bring to a rolling boil, stirring constantly on medium-high heat. Turn the heat down and simmer on low heat for 30 minutes, stirring constantly. Bring it back up to a boil that can not be stirred down. Turn off heat.
  • 2. Ladle quickly into sterilized pint jars leaving 1/4 inch head space. Remove bubbles. Wipe rims. Place lids and rings, tighten to fingertip tight.
  • 3. Place jars in boiling bath, put the lid on canning kettle. Bring to a boil for 30 minutes. Remove the lid, wait 5 minutes. Remove jars to a towel lined surface to sit and cool for 24 hours before moving to store them in pantry. Check jars to make sure they sealed before moving them.
  • 4. *** Be sure and taste this several times to get the flavor you like, add or take away pepper and spices as desired. *** This is very good on burgers, chicken, beef and pork... especially when grilled. I wouldn't serve this to children.
