Hungry Man's Breakfast Casserole image

Grandma would be proud! This was a good dish to make the night before and refrigerate. Let it come to room temp while preheating the oven. I often seen this at Sunday Services Brunch when I was a child. Sitting all purdy next to a glass of orange juice. THAT was breakfast. Mmm, good.

1 lb sausage, ground
2 c stuffing mix, chicken, dry
2 c milk, 2%
1/2 c onion, chopped
1/2 c red bell pepper, chopped
6 eggs
1 c cheddar cheese, shredded
cooking spray

Steps:

  • 1. Preheat your oven to 350 degrees (F) and spray a baking dish (9x13) with cooking spray. Set aside.
  • 2. In a skillet, cook and crumble sausage over med heat. Drain. Set aside.
  • 3. In a large bowl, add stuffing, milk, sausage, onion and bell pepper. Mix well.
  • 4. In a separate bowl, whisk the eggs and pour over the sausage mixture, followed by the cheddar cheese and stir together until well combined.
  • 5. Pour everything into the prepared baking dish and bake, uncovered for 45 minutes, or until set and the color is nice and browned. Cover if the edges are getting too dark before end cook time.
