Indiana Ham Salad Sandwich Spread (No Ham) image

Its actually made from bologna but we always called it ham salad. This was very popular in the 1950's and 60's in Northern Indiana. A locally owned small grocery store in our little town still makes it for their deli case and regularily sells out. Mom made this sandwich spread at least twice a month and we never got tired of...

Number Of Ingredients 6

1 1/2 lb bologna , coarsely ground
4 hard-boiled eggs , finely chopped
1/2 c sweet pickle relish
1 Tbsp prepared mustard
1 c mayonnaise
salt and pepper , to taste

Steps:

  • 1. Mix sweet pickle relish, prepared mustard, and mayonnaise to make dressing. Stir dressing into meat and eggs. Mix well. Cover and chill. Makes 1 quart of sandwich filling.
  • 2. Serve on sandwich bread, buns, or crackers. You can add lettuce and tomatoes if you like.
