Italian Harvest Soup image

I love soups, but I love to make different ones all the time, otherwise it gets boring. This is a nice spin on vegetable soup. The dry salami to use is hot soppressata, which can be bought in the supermarket here in the Northeast, but certainly at any Italian deli.

The soup was a bit too spicy for my taste. I would use less red pepper flakes next time.

This soup is a great way to use up leftover turkey or chicken. I also like to add a can of black beans for extra protein.

This soup is a great way to get your kids to eat their vegetables. My kids love the tortellini and the vegetables are so tender that they don't even notice them.

I'm a vegetarian and I made this soup without the sausage. It was still delicious! The vegetables were tender and the broth was flavorful.

I'm not usually a fan of vegetable soups, but this one was an exception. The broth was rich and flavorful, and the vegetables were perfectly cooked. I especialmente liked the addition of the tortellini, which added a nice texture to the soup.
