JALAPENO CORNBREAD CASSEROLE image

3 tbsp butter, melted
1 cup yellow cornmeal
1 tbsp baking powder
2 cups Old Cheddar, grated
2 eggs, lightly beaten
1 cup sour cream
1 small can cream corn
1 small seeded and chopped jalapeno, or to taste
Salt to taste

Steps:

  • Preheat oven to 350 F. Butter a 9 x 9 inchbaking dish. Stir all ingredients together, reserving 3/4 cup cheese for topping. Spoon into casserole. Sprinkle with reserved cheese and bake for 45-55 minutes or until golden.
