Jamaican Pork Stew image

This is a great mealfor guests. Just 2 pots makes a large amount of food. It has Rum in it. But it leaves a great taste

Number Of Ingredients 15

4 Tbsp olive oil
1 lb cubed pork stew meat
flour for dredging seasoned
1 small onions chopped
4 tsp minced garlic
1/3 c rum
a little roux to thicken
2 c chopped tomatoes
salt and pepper to taste
1 tsp cumin
1 c beef broth
1 c diced cooked potatoes
2 Tbsp molasses
4 oz peas
4 servings cooked rice

Steps:

  • 1. Dredge pork in flour, Saute 10 min. Add the remaining Ingrediants. Simmer 25 to 30 min at a low heat. Place over cooked rice. ENJOY
