From Madhur Jaffrey's World of the East Vegetarian Cooking. I ususally make it with 2 regular cucumbers sliced on a mandolin slicer. And I just throw unaltered sesame seeds in it.

This salad is a great make-ahead dish. I often make it the night before and let it sit in the fridge overnight. The flavors meld together and the salad is even better the next day.

I tried this recipe and found it to be a bit too vinegary for my taste. I would recommend using less rice vinegar next time.
