Time 40m

Yield 25 to 27 cookies

Number Of Ingredients 11

3/4 cup all-purpose flour
1/2 cup almond flour
2 tablespoons arrowroot
2 tablespoons sugar
1 tablespoon dried lavender
1/2 teaspoon fine sea salt
1/2 teaspoon baking soda
1 stick unsalted butter, cut into 1/2-inch pieces, chilled
1 large lemon, zested
2 tablespoons honey
1 tablespoon fresh lemon juice

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a food processor, pulse together the flours, arrowroot, sugar, lavender, salt and baking soda.
  • Add the butter and lemon zest. Pulse until the mixture forms a coarse meal. Add the honey and lemon juice. Pulse until the mixture forms a soft dough. Form the dough into 1-inch round balls and press into discs, about 1 1/2 inches in diameter and 1/4-inch thick. Arrange in a single layer on the prepared baking sheet. Bake until light brown around the edges, 9 to 11 minutes. Cool for 5 minutes. Transfer to a wire rack and cool completely, about 15 minutes.

I love the way these cookies look! The purple lavender and the yellow lemon zest make them so festive.

These cookies are a great way to use up leftover egg whites. I always have a few egg whites left over after making macarons, and these cookies are a perfect way to use them up.

These cookies were a bit dry for my taste. I think I would add an extra egg yolk to the batter next time.

I'm not a huge fan of lavender, but these cookies were surprisingly good. The lemon flavor really balances out the lavender, and the cookies are not too sweet.

These cookies are perfect for a spring or summer party. They're light and refreshing, and the lavender and lemon flavors are a nice change from the usual chocolate chip cookie.

I had some trouble finding culinary lavender, so I used regular lavender instead. The cookies still turned out great, but I think the culinary lavender would have given them a more pronounced flavor.

These cookies are a bit too sweet for my taste. I would recommend reducing the amount of sugar in the recipe.

I love the subtle floral flavor of the lavender in these cookies. It pairs perfectly with the bright citrus of the lemon. The cookies are also very easy to make, which is a bonus.

These cookies are delightful! The combination of lavender and lemon is unique and refreshing. The cookies are light and airy, with a delicate crumb. I will definitely be making these again.
