Lemon-Go-Lightly Cookies image

Number Of Ingredients 10

2 c all purpose or unbleached flour
2 c hungry jack mashed potato flakes
1 c sugar
1 c brown sugar, firmly packed
1/3 c finely chopped nuts
1 tsp baking soda
3/4 c margarine or butter, melted
1 tsp grated lemon peel
2 eggs
1/4 c sugar

Steps:

  • 1. Heat oven to 350. Lightly spoon flour into measuring cup; level off. In large bowl, combine all ingredients except 1/4 cup sugar; blend well. Mixture will be crumbly. Firmly press into 1 inch balls; roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 9 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
  • 2. Makes 6 dozen cookies.
