Light Vegetable Broth image

Number Of Ingredients 14

6.5 qt water
2 c white wine
6 stalks celery, chopped
6 carrots, scrubbed and coarsely chopped
2 large potatoes, scrubbed and coarsely chopped
3 zucchinis, sliced
2 large onions, chopped
1 leek, white part only, thickly sliced
5-6 garlic cloves, crushed
1/2 lb mushrooms, whole
10 peppercorns
1 large sprig parsley
1 large sprig of thyme
2 bay leaves

Steps:

  • 1. Place all of the ingredients in a large soup pot.
  • 2. Bring to a boil, reduce the heat, cover, and simmer over low heat for 3 to 4 hours.
  • 3. Strain the broth and discard the vegetables.
  • 4. Freeze in 1-2-cup containers for use in recipes calling for vegetable stock or broth.
