Mama's Chicken Soup image

It is said it will cure the common cold and almost any other ailment!

Number Of Ingredients 8

4-5 lb young hen, cut in pieces
4 qt water
1 large onion, quartered
3 ribs celery with leaves, chopped
3 carrots, scraped and chopped
4 tsp dried chicken soup base
1-2 tsp salt
cooked rice, cooked noodles, or prepared matzo balls

Steps:

  • 1. Put hen in water in large soup pot. Bring to boil and skim. Add onion, celery, carrots, soup base and salt. Cover and simmer til chicken is tender, about 2 hours.
  • 2. Remove chicken and reserve for other dishes. Strain broth and return to pot. Return carrots to broth and adjust seasoning. To serve, warm slowly and add rice, noodles or matzo balls. Serves 8 to 10
