Mandarin spinach salad image

Light, tangy & citrusy. A friend shared it with me. Original creator unknown.

Number Of Ingredients 13

4 c spinach, fresh
1 box bow-tie pasta, cooked and drained
1/3 c toasted pine nuts
14 oz mandarin oranges, drained
1/4 c cilantro, fresh
1/4 c cranberries
DRESSING
1/3 c teriyaki sauce
1/3 c rice wine vinegar
1/2 tsp garlic powder & onion powder
1/4 tsp salt & pepper
1 Tbsp sugar
1/2 c vegetable or canola oil

Steps:

  • 1. Cook and drain pasta. Toast pine nuts. Add in dried cherries, mandarin, cilantro and pine nuts.
  • 2. Rinse and prep spinach.
  • 3. Make dressing. Combine all and chill.
