Maple Walnut Bread - GF image

A great maple-tasting bread for gluten free fans. Recipe is from the Pure Canadian Maple Syrup site.

2 1/4 c gluten free flour blend (such as king arthur)
2/3 c tapioca flour
2/3 c potato starch
1 Tbsp baking powder
1/2 tsp baking soda
1 1/2 tsp xanthan gum
1 1/2 tsp cinnamon
1 tsp salt
1 c maple syrup (feel free to reduce the syrup to your desired level of sweetness)
1 c buttermilk, at room temperature
2 large eggs
1 stick unsalted butter, softened
3/4 c chopped walnuts

Steps:

  • 1. Heat oven to 350 degrees. In a large bowl, combine flours, starch, baking powder, soda, xanthan gum, cinnamon, and salt.
  • 2. Heat butter in a small saucepan over medium heat, stirring occasionally, until butter turns a nut brown color. Remove from heat and set aside.
  • 3. In a large bowl, combine maple syrup, buttermilk, and eggs. Stir in browned butter. Add wet ingredients to the dry - stir just until combined. Stir in walnuts.
  • 4. Pour mixture into a well-greased 9 x 5 inch loaf pan. Bake 55-60 minutes, until it rises and a toothpick inserted into the middle comes out clean.
