Yield 8 big bowls

Number Of Ingredients 12

1 1/2 cups sweet corn
1 1/2 cups white hominy
1 cup chopped onion
1/2 cup chopped bell pepper
1 cup chopped parsley
1 cup dry white wine (or white grape juice)
2-3 tsp salt
2 tsp granulated garlic
1 tbsp soy sauce
2 lb lean chopped pork
Optional: red pepper sauce or cayenne to taste
Additional water or chicken broth (low sodium)for your desired consistency. I like it as a very thick stew.

Steps:

  • Saute onion, bell pepper and parsley in olive oil or canola oil. Add corn and hominy, heat through. Add salt, garlic and soy sauce (and red pepper sauce, if desired). Add the white wine or white grape juice (which is an excellent taste sensation). Bring to a simmer then add the pork. Cover and simmer for 1 hour. Serve in shallow bowls over cheesy grits and sprinkle a little fresh parsley before serving. MMMMM Good!
