Medallions Of Beef image

6 oz beef tenderloin
clarified butter, as needed
1 tsp minced garlic
2 oz tomatoes, peeled, seeded and chopped
2 oz demi glace
1 tsp fresh tarragon, finely chopped

Steps:

  • 1. Saute the beef in the clarified butter to the desired doneness.
  • 2. Keep the beef warm.
  • 3. Saute the garlic in clarified butter to release its aroma.
  • 4. Add the tomato and demi-glace.
  • 5. Let the mixture reduce slightly.
  • 6. Add the tarragon and adjust the seasoning to taste.
  • 7. Serve the sauce on the medallions.
