What's the best diet? No question, according to dozens of recent studies: The Mediterranean diet wins, hands down. Why is the Med diet so good for you? Top reasons: high antioxidants and fiber in plant foods; good fat in olive oil and fish; and less bad fat, less iron and fewer carcinogens (from eating fewer animal foods).

This salad is a great way to use up leftover vegetables. I often add whatever I have on hand, such as bell peppers, zucchini, or mushrooms.

I found the dressing to be a bit bland. I added some lemon juice and garlic powder to give it more flavor.

This salad is a bit too oily for my taste. I would recommend using less olive oil or a lighter dressing.

I'm not a huge fan of salads, but this one is an exception. The dressing is light and tangy, and the vegetables are fresh and crisp.
