Mexican Corn Salsa image

Great side dish for: steak, fish or chicken!

1 c frozen corn kernels, thawed
1 c chopped peeled jicama
1/2 c cucumber , peeled, seeded, chopped
1 medium red onion, chopped
1/2 c red bell pepper
1/4 c finely chopped fresh cilantro
1/2 jalapeno pepper, seeded and chopped
1 c black beans, canned

Steps:

  • 1. In a bowl, combine all of the ingredients. Enjoy!
