~ Mexican Inspired Hashbrown Casserole ~ image

These potatoes were a perfect pairing with the cheesy chicken dish I made for supper. Enjoy!

Number Of Ingredients 6

1 small onion, minced
1 - 23 oz salsa con queso ( med heat )
1 - 30 oz shredded hash browns - or have used cubed style homefries
1 - 8 oz sour cream
1 stick butter, melted
1 - 16 oz shredded, fiesta blend cheese

Steps:

  • 1. Preheat oven to 350 degree F. Mix all ingredients in a large bowl except for the Fiesta blend cheese.
  • 2. Spray a 9 x 12 baking dish with non stick cooking spray. Spread hash brown mixture evenly into prepared dish. Bake for 50 minutes and remove from oven.
  • 3. Sprinkle evenly with shredded cheese and bake another 10 - 15 minutes or until cheese is melted and bubbly.
  • 4. Remove from oven and leave set up about 5 minutes, before cutting. Enjoy!
