MEXICAN STYLE GOULASH

Mexican style Goulash image

A little bit of Mexican and a little bit of Italian ingredients makes this dish very flavorful.

1 1/2 lb ground beef
1 can(s) diced tomatoes with green chillis
1 can(s) italian style tomatoe sauce
1 jar(s) 16oz. chunky salsa
2 c frozen (thawed) or canned mixed vegetables
1 small jar black or green olives chopped
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
1 c shredded mexican style cheese
1 pouch of onion soup mix
1/2 c chopped celery
4 c macaroni

Steps:

  • 1. Cook ground beef, drain. Add onion soup mix, diced tomatoes, celery, chopped olives, salsa. Heat through.
  • 2. Add mixed vegetables, paprika, salt and pepper. Cook on low until heated through.
  • 3. Cook macaroni in separate pot until done. Drain and add to ground beef mixture. Pour into oven safe casserole dish. Sprinkle shredded cheese on top.
  • 4. Preheat oven to 350 degrees. Place casserole in oven and heat until cheese is melted and bubbly.
