Mexican Wedding Cookies image

So sweet. So delicate. So good. This version of the wonderfully classic wedding cookie is nut-free... so it's perfect for those with nut allergies. Enjoy!

1 c butter, softened
1/2 c powdered sugar
1 1/2 tsp vanilla extract
2 c all-purpose flour
1/2 tsp salt
1 c old-fashioned rolled oats (quaker oatmeal, not instant)

Steps:

  • 1. PRE-HEAT OVEN TO 350 degrees
  • 2. In a large bowl beat butter until creamy.
  • 3. Gradually beat in powdered sugar, then salt, vanilla, flour, and salt.
  • 4. When blended and smooth stir in oats. shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. You can also flatten by pressing with fingers.
  • 5. Bake 18-22 minutes or until golden brown.
  • 6. While still warm roll in powdered sugar.
  • 7. Cool on wire rack. Makes 2 1/2 to 3 dozen cookies.

These cookies are a bit too crumbly for my taste. I would recommend chilling the dough for at least 30 minutes before baking to help them hold their shape.
