Microwave Stuffed Pork Chops image

This is a family favorite. There are only a few ingredients, but the flavor is great and the pork chops are very moist and tender. I usually double the sauce because everyone loves to pour it over the stuffing.

Time 55m

Number Of Ingredients 6

4 pork chops, 1-inch thick
1/2 c ketchup
2 Tbsp brown sugar
2 tsp mustard
1/4 tsp chili powder
1 6-oz pkg seasoned stuffing mix, prepared

Steps:

  • 1. Cut pocket in pork chops. Stuff with stuffing.
  • 2. Mix 1/2 cup ketchup, brown sugar, mustard, and chili powder.
  • 3. Brush 1/2 of the mixture over pork chops.
  • 4. Cover with waxed paper. Microwave at medium power for 35 to 40 minutes. Rotate 1/2 turn after 15 minutes.
  • 5. Let stand for 5 minutes. Brush with remaining glaze.
  • 6. NOTE: Cooking times can vary depending how thick your chops are. The last time I made this, my chops were pretty thin and they only took around 10-15 minutes.

I cooked the pork chops for a few minutes longer than the recipe said, and they were still a little pink in the middle. I would recommend cooking them for the full amount of time.

I didn't have any bread crumbs, so I used crushed crackers instead. The pork chops still turned out great.
