Steps:
- 1. In a bowl, blend together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix mashed bananas and the melted butter together. Add the sugar, egg and vanilla, mix well.
- 2. Add the flour mixture to the banana mixture, stir. Add the chopped walnuts. Mix together, but don't over mix.
- 3. Line mini muffin tins with paper liners. Fill each liner 3/4 full. Bake at 350 degrees, for 15 minutes, or until a toothpick comes out clean. Muffins will be lightly browned.
