Mini Cheese-Stuffed Meatloaves image

Sometimes our meals are purely nothing but comfort foods. I saw a similar recipe and decided to try a few things different and served these mini meatloaves with a side dish of mashed potatoes!

12 cupcake liners
1 large egg, beaten
1/2 c milk
1/4 c steak sauce
1/2 c quick cooking oats
1/2 tsp salt
1 lb lean ground beef
12 cubes mild cheddar cheese
1/4 c light brown sugar
2/3 c ketchup

Steps:

  • 1. Preheat oven to 375 degrees F. Line 12 count muffin tin with cupcake liners. In a large bowl, combine the beaten egg, milk, steak sauce, uncooked quick cooking oats, beef and salt.
  • 2. Divide mixture into twelve equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat around the cheese into a ball. Place into muffin tin and continue with remaining meat and cheese.
  • 3. In a separate small bowl, combine the ketchup and brown sugar. Stir thoroughly and spread over each mini meatloaf.
  • 4. Bake uncovered on center oven rack for 25 minutes.
