MIXED BERRY COUSCOUS image

Yield 4 bowls

Number Of Ingredients 10

1 cup instant couscous
2 cups apple and cranberry juice
1 cinnamon stick
2 teaspoons orange or grapefruit zest
8 oz fresh raspberries
8 oz fresh blueberries
8 oz fresh strawberries, halved
2 tablespoons golden syrup
fresh mint leaves (optional)
6 1/2 oz Greek yoghurt (optional)

Steps:

  • Place the couscous in a large bowl. Pour the apple and cranberry juice into a saucepan with the cinnamon stick. Cover and bring to the boil, then remove from heat and pour over the couscous. Cover the couscous with plastic wrap, and let sit for 5 minutes, or until all the liquid has been absorbed. Remove the cinnamon stick from the bowl. Gently fold in the zest and fresh berries. Spoon the couscous mixture into serving bowls and drizzle with the golden syrup. May be served with a dollop of the yoghurt and garnished with the mint leave, but is fine without them. One serving (including yoghurt) has 8.5g protein, 3g fat, 70g carbohydrate, 7g dietary fiber, 8mg cholesteral, 345 calories
