Mom's Banana Cake image

Please note this is a CAKE ... NOT a bread, though it works great in loaves, too ... I actually think it's tastier than most banana breads, and lighter!

Number Of Ingredients 10

1/2 c shortening
1 1/2 c sugar
2 large eggs
2 c flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 c mashed bananas
1/4 c buttermilk
1 tsp vanilla extract

Steps:

  • 1. Cream shortening and sugar.
  • 2. Add eggs.
  • 3. Sift dry ingredients together and add a little at a time. Mix well.
  • 4. Add bananas, buttermilk and vanilla
  • 5. Bake in cake pans or loaf pans at 350 for 30-35 minutes.

This cake is so easy to make, and it always turns out perfectly. I love that I can use ripe bananas that would otherwise go to waste. The cake is moist and flavorful, and the frosting is the perfect complement.
