Mona's Lighter Pumpkin Pie image

This is a reduced-fat and very low sugar pumpkin pie that my diabetic husband loves. It has a nice texture and isn't too sweet. Those who prefer a sweeter-tasting pie may want to increase the amount of sugar substitute blend that's used. Remember the brown sugar blend does have sugar, so diabetics will need to watch how much is added.

This recipe is missing some important steps. It doesn't say how to preheat the oven or how long to bake the pie.

This pumpkin pie was a little too sweet for my taste, but it was still good. I think I'll try reducing the amount of sugar next time.

I'm not a huge fan of pumpkin pie, but this one was really good. The crust was flaky and the filling was creamy and flavorful.
