Time 30m

Yield About 80 3-inch latkes

Number Of Ingredients 8

2 pounds Idaho potatoes
2 pounds Yukon new potatoes
5 eggs, beaten
1 cup flour
Salt
Vegetable oil for frying
Sour Cream
Apple sauce

Steps:

  • Peel potatoes, and keep in cold water until you are ready to grate them.
  • Grate the potatoes coarsely by hand (or with a Cuisinart using first the shredding blade then the blending blade). The mixture should be slightly lumpy and not too blended. Add the beaten eggs. Mix in up to 1 cup of flour. Add a little salt. The batter should be fairly liquid and not too thick.
  • Heat about a half-inch of vegetable oil in a frying pan. When the oil is very hot, use a soupspoon as a measure to put small amounts of the batter in the oil. Fry the pancakes on one side, then the other, until they have turned brown on both sides and are crispy around the edges.
  • Drain the pancakes on paper towels that have been placed on a platter atop a saucepan of simmering hot water or keep warm in the oven.

I'm not sure what all the hype is about. These latkes were just okay. I've had better.

These latkes were a nice change of pace from my usual potato latkes. The pineapple added a nice sweetness and brightness to the dish.

I'm a huge fan of pineapple, so I was excited to try these latkes. They didn't disappoint! The pineapple flavor was perfect, and the latkes were crispy and delicious.

These latkes were a disaster! They fell apart when I tried to flip them, and they tasted like nothing. I'm not sure what I did wrong.

I found these latkes to be a bit bland. I think they needed more seasoning. I added some salt and pepper, and that helped a lot.

These latkes were a bit too sweet for my taste, but they were still pretty good. I think I would try using less pineapple next time.

I wasn't sure what to expect from these latkes, but I was pleasantly surprised. They were crispy on the outside and fluffy on the inside, and the pineapple flavor was just right.

These latkes were a hit with my family! Even my picky kids loved them. I'll definitely be adding this recipe to my regular rotation.

I'm not usually a big fan of pineapple, but these latkes changed my mind. The pineapple flavor was subtle and perfectly balanced by the other ingredients. I'm definitely going to be making these again!

I was pleasantly surprised by how easy these latkes were to make. I was expecting them to be a lot more time-consuming, but they came together really quickly. And they tasted just as good as they looked!

These latkes were absolutely delicious! The pineapple added a wonderful sweetness and brightness to the dish, and the coconut flour gave them a nice crispy texture. I will definitely be making these again!
