Steps:
- 1. Combine peanut butter, honey, coconut oil into a medium sauce pan and stir together over medium heat until melted.
- 2. Add dry ingredients to large bowl: oats, chocolate chips and rice crispy cereal. Mix together
- 3. Pour melted peanut butter mixture over the dry ingredients in the bowl. Mix well and pour the combined ingredients into a 9 x 13 baking dish. This is fairly thick, so you could use a larger dish. I would suggest lining your baking dish with parchment paper as I had to let set out on the counter to soften a bit before I could cut and remove from baking dish. Keep refrigerated. I covered my cut cookie bars with saran wrap to keep them fresher.
