Norwegian Waffles image

4 eggs
1/2 c sugar
1/2 c butter, melted
2 c buttermilk
1 tsp baking soda
1 c milk
1 Tbsp ground cinnamon
2 1/2 c flour
6 oz maple syrup

Steps:

  • 1. Beat eggs and sugar with an electric mixer until light and fluffy. Add melted butter, buttermilk, baking soda, milk, and cinnamon; stir. Add flour slowly, stirring.
  • 2. Bake batter in a hot waffle iron according to manufacturer's instructions. Serve with maple syrup.

Can I use table cream for buttermilk, and just add some acidity like lemon juice.

The directions said to make the batter immediately before cooking. Can I do any of the steps the night before, maybe mix everything except the egg beaters.
