Steps:
- Preheat oven to 325. Butter and sugar a 1-1/2 quart souffle dish or casserole. Put milk and butter in saucepan + heat 'til barely boiling. Slowly add oatmeal + stir constantly. Cook oatmeal 'til thick, stir often. Remove from heat + add cream cheese, salt, sugar, nutmeg, cinnamon. Stir briskly to blend + smooth misture. Beat the 3 yolks slightly + slowly add them to oatmeal, stir constantly. Stir in raisins and walnuts. Beat egg whites 'til stiff but still moist. Using spatula, gently fold whites into oatmeal. Don't overfold - only 'til no large lumps of whites remain. Spoon mix into souffle dish. Bake 35-40 mins or 'til center still trembles a trifle but most of souffle is set. Serve immediately with cream or warm milk.
