Came up with this recipe because I had a little bit of this and that and remembered a sandwich I loved from a restaurant at Fairlane Town Plaza

Number Of Ingredients 8

2 eggs cooked how ever you like
2 slice bacon, ham, sausage
1 english muffins
2 tomato slices
1 tsp butter, melted
1 tsp flour
1/2 c milk or cream
1/2 c cheddar cheese or what you have on hand

Steps:

  • 1. make basic white sauce; melt butter add flour and stir till smooth, add milk stir add cheese stir til smooth and thick. This amount will be enough for 2-3 sandwiches
  • 2. cook bacon, ham or sausage and set aside. I used leftovers of bacon.
  • 3. cook eggs anyway you want. While eggs are cooking split english muffin and toast. Butter muffins on each muffin add 1 slice of tomato,1 egg, 1/2 cheese sauce and top with bacon.
  • 4. I serve open face. If using ham or sausage, place meat ontop of egg then add cheese sauce. This recipe is great to customize to any leftovers you have
