1/3 cup olive oil
1 large onion, chopped
1 teaspoon coarse kosher salt
fresh ground pepper

Steps:

  • Pre-heat oven to 400.
  • Combine ingredients in 9x13 roasting dish.
  • Bake uncovered, stirring occasionally, for 45-50 minutes or until potatoes are soft and golden brown.
