Pancakes For One Or Two image

I found this in the 1998 Taste of Home Annual Recipes. It was sent in to them by Ann Schenk of Winnett, Montana.She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine.This recipe make enough for one, but if you make them just a bit smaller you...

Number Of Ingredients 7

1/2 c all-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 large egg
1/2 c buttermilk
1 1/2 Tbsp vegetable oil

Steps:

  • 1. In a bowl combine flour, baking powder,soda,and salt.
  • 2. In another bowl beat,egg,milk,and oil.
  • 3. Stir in dry ingredients until just blended.
  • 4. Pour batter by 1/3 cupfuls(if making smaller use 1/4 cupfuls )onto a lightly greased griddle,or can use a lightly greased skillet.
  • 5. Turn when bubbles form on top of pancakes and edges are lightly browned.Cook until other side is golden brown.
