PARCHMENT-BAKED CHICKEN image

Number Of Ingredients 11

-4 parchment sheets (12"x18")
-2 Cups arugula leaves, torn
-4 Skinless, boneless chicken breasts
-2 tsp fresh sage, chopped
-2 tsp fresh rosemary chopped
-1 Cup plum tomatoes, chopped
-3/4 tsp salt
-1/2 tsp freshly ground pepper
-4 tsp olive oil
-4 tsp kalamata olives, sliced and pitted
-cooking spray

Steps:

  • -Preheat oven to 450 -Unfold parchment paper and coat lightly with cooking spray. -Place 1/2 C arugula on one side of the parchment paper. -Place chicken over arugula and then add the other ingredients, drizzling 1 tsp of olive oil before folding paper up. -Repeat with the other 3. -Bake for 20 min. or until lightly browned.
