Peach Cobbler (Celiac-Friendly) image

Delicious peach cobbler that is celiac-friendly. Easy to make and very tasty.

1 cup buckwheat flour
½ cup brown sugar
¼ cup white sugar
2 teaspoons baking powder
1 teaspoon vanilla extract
½ teaspoon salt
¾ cup vanilla-flavored almond milk
6 tablespoons butter, melted
1 (28 ounce) can sliced peaches, drained
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch baking dish.
  • Combine flour, brown sugar, white sugar, baking powder, vanilla extract, and salt in a bowl; mix in almond milk and butter.
  • Pour flour mixture into the prepared baking dish. Top with peaches. Sprinkle cinnamon on top.
  • Bake in the preheated oven until the top is lightly browned and the peaches are bubbling, about 30 minutes.
