I'm not a huge fan of peaches, but I really enjoyed these enchiladas. The filling was creamy and flavorful, and the peaches added a nice sweetness.

I had some trouble rolling the enchiladas, but they still tasted great. The filling was a bit runny, so I would recommend using less liquid next time.

These enchiladas were a bit too sweet for my taste, but my husband loved them. I think next time I'll use less sugar in the filling.
