Yield 18

Number Of Ingredients 8

7 - 8 Medjool dates, pitted
1/2 cup raw almonds
1/2 cup raw sunflower seeds
1/2 cup cooked quinoa
2 tablespoons chia seeds
1/2 cup unsalted smooth peanut butter
1/4 cup raw honey
1 scoop vanilla protein powder

Steps:

  • 1. Add the dates to the bowl of a food processor fit with the steel blade and process until chopped. 2. Add the nuts, quinoa and seeds and process until a meal has formed. 3. Add the protein powder and process a few times until combined. 4. Add the peanut butter and honey and process until a thick dough forms. 5. Transfer the dough to a parchment lined baking pan. I used a loaf pan for skinny, thick loaves, but you can also use a square baking dish for bars that thinner. 6. Place the bars in the freezer until set, about 1 - 2 hours. 7. Remove from the freezer and slice into bars. Store in freezer until you're ready to eat them.

These Larabars are a bit expensive. I think I'll stick to buying the store-bought kind.

I'm not a fan of the texture of these Larabars. They're a bit too chewy for my taste.

These Larabars are a great source of protein and fiber. They're also a good source of healthy fats.

I'm allergic to peanuts. Do you have any suggestions for a substitute?

I had a hard time finding unsweetened peanut butter. I ended up using regular peanut butter and reducing the amount of honey. The Larabars turned out great!

These Larabars are a bit too sweet for my taste. I think I'll try reducing the amount of dates next time.

These Larabars are delicious! The peanut butter flavor is rich and creamy, and the dates and nuts add a nice sweetness and crunch. I'll definitely be making these again.
