PEAR PUDDING CAKE image

This cake recipe was given to me when I was cooking for the High School in Stayton, Ore. The original recipe served 96 portions and was baked into two 18" x 26" x 2" pans. I thought it was so good that I sized it down to a 9 x 13 pan and cut it 4 x 6 and it serves 24 portions. I'm going to try and put a picture of the original...

I followed the recipe exactly, but my cake didn't turn out well. It was dry and bland. I'm not sure what went wrong.

I've made this cake several times, and it's always a hit. The only thing I would change is to add a little more spice, like cinnamon or nutmeg.
